This one’s a crowd-pleaser. Simon calls it his go-to Tex-Mex comfort food, and for good reason. It’s all about layers, melty cheese, and bold flavor. Cooked perfectly on our Wizard Fire Pit, these nachos are quick, easy, and ridiculously satisfying.
Ingredients:
- 1 Tbsp Oil
- 1 Bag Corn Chips
- 1 Jar Tomato Salsa
- 1 Cup Grated Cheese
- 1 Can Black Beans, Drained
- 1 Cup Queso
- 1 Large Avocado, Diced
- 2 Spring Onions, Sliced
- 1 Bunch Coriander, Chopped
- 1 Lime
Method:
- Start your Wizard Fire Pit by stacking dry hardwood like Manuka, Kanuka, Oak, or Applewood in a log cabin style, using firelighters in the center. You can also use compressed hardwood pellets from the hardware store (just check the label to make sure they’re 100% hardwood). Once the fire is strong, place the grill accessory on top.
- Lightly oil the bottom of a large cast-iron skillet to prevent sticking.
- Start layering: chips, salsa, beans, cheese, queso, avocado, spring onions, coriander, then repeat. Save a bit of coriander for garnish.
- Place the skillet on your Wizard Fire Pit grill, cover, and let the fire do its magic for 10 minutes or until the cheese melts.

🍔 Cajun Surf & Turf Burger
